Sure. Here you go:

* 1 Frozen deep dish pie crust
* 1 little can chopped green chiles
* 1 cup chopped broccoli florets
* 1/2 onion, chopped
* 5 of those little sweet red, yellow, orange peppers, chopped
* 1 T butter
* 1 cup fresh spinach, chopped
* 1/2 cup (or so) shredded cheddar
* 4 eggs
* 1 cup milk
* 1/2 teaspoon salt
* 1 teaspoon cumin

* In a skillet, saute the peppers, onions and broccoli in butter until tender. Add spinach and stir. Spoon into the crust.
* Cover the pie contents with cheese.
* In a large bowl, whisk eggs, milk, salt, cumin. Pour into the pie shell.
* Bake @350°F for 45 minutes (or until a knife in the center comes out clean). Let stand for a while so it cools down and solidifies.

Thanks Abbot. If you don't mind, I'd like to share a simple breakfast dish, similar to your quiche. (deep pie pan)
*1/2 lb sausage
*1 small onion
*1 potatoe, grated
*1/2 cup shredded Cheddar cheese
*1/4 cup chopped green onion
*3/4 cup milk
*1/2 cup bisquick
*2 eggs
*1/8 tsp. salt
*1/16 tsp. pepper
1/4 cup1/4 cup shredded Cheddar cheese (to top it)
Brown sausage and onion. Drain and mix with all other ingredients except last cheese. Pour into pie pan, top with cheese, and bake at 400 degrees for 40 minutes. (I've also substituted bacon, ham, etc. for the sausage)

When my wife wants me to make it, she calls it the "breakfast casserole thing".
